Mussels Marinieres Recipe

Ingredients
60 mussels
1/2 teaspoon pepper
1/2 cup chopped parsley
Pinch dried thyme leaves
1 cup chopped onion
1 cup dry white wine
3 tablespoons butter

Directions
1. Wash and rinse the mussels very carefully. Discard any that are not closed. Scrape them and rinse them again in running water. They must not remain in water because then they open and emit the tasty salty water that they contain.
2. Put the mussels in a saucepan with the pepper, parsley, thyme, raw chopped onions, and wine. Bring to a boil over high heat and continue cooking until they open completely. This works best if you shake the saucepan several times with the cover on, to get the mussels that are at the bottom of the saucepan to the top and vice versa.
3. Remove the mussels from the heat as soon as they open.
4. Pour the liquid into another saucepan and put it over high heat. Add the butter and parsley. Simmer until half of the liquid has evaporated.
