Mussels In Beer Sauce Recipe

Ingredients
2 tbsp butter
2 tbsp French shallots, chopped
1 1/2 cups brown beer
4 1/2 lbs mussels, cleaned, soaked
3 tbsp potato flour
1/2 cup vegetable juice
Sea salt
Fresh ground pepper
Directions
In a casserole dish, melt butter.
Lightly cook shallots 3 minutes or so.
Pour in beer.
Bring to a boil.
Add mussels.
Cover.
Reduce heat.
Cook 5 minutes or so.
Stir halfway through cooking.
Once mussels are cooked, remove with a slotted spoon.
Transfer to 4 individual plates.
Set aside.
Dilute potato flour in vegetable juice.
Fold into cooking juices.
Season to taste.
Bring to a boil.
While stirring, simmer until liquid thickens.
Pour over mussels.
