Mussels Hauraki Recipe
Ingredients
| Butter | 30 Gram | |
| Onion | 1 , finely chopped | |
| Tomatoes, skinned and chopped 2 | ||
| White wine | 60 Milliliter | |
| Cooked mussels 375 g | ||
| Ground black pepper | 1 Pinch | |
| Chopped parsley for garnish | ||
| Crusty French bread for serving | ||
Directions
In a saucepan, heat the butter and saute onion until clear and tender.
Add tomatoes and cook 1 minute.
Add wine, cover and cook for 3 minutes.
Add the mussels and heat through, but do not boil.
Season with pepper and serve immediately, sprinkled with chopped parsley.
Serve with crusty French bread.
