Mussels Cremolata Recipe

Ingredients
4 1/2 lbs (2 kg) mussels
2 tbsp (30 ml) butter
1/4 Cup (60 ml) French (dry) shallots, finely sliced
1/2 Cup (125 ml) tomatoes, diced
2 tbsp (30 ml) chopped parsley
1/2 tsp (2 ml) thyme
1 garlic clove, finely sliced
3/4 Cup (180 ml) white wine
1/3 Cup (80 ml) orange juice
1 Cup (250 ml) 35% cream
4 tsp (20 ml) tomato paste
Salt and pepper
Directions
– Scrub and rinse mussels well.
– In a large saucepan, melt butter and cook shallots with tomatoes, parsley, thyme and garlic over low heat. Add white wine, orange juice and mussels. Cover and cook over high heat until mussels open.
– With a skimmer, remove mussels and put them in individual bowls.
– Reduce cooking liquid by 1/3, then add cream and cook until sauce is smooth. Add tomato paste, season with salt and pepper and pour over mussels.
