Ingredients

 10 pounds mussels, cleaned and brushed
 Butter3 Tablespoon
 Celery leaves from 1 bunch celery, chopped
 Parsley sprigs10
 Onion1 , chopped
 White wine1 Cup (16 tbs)
  black pepper1

Directions

Heat the butter in a large pan over low heat and add celery leaves, parsley, onion, wine and pepper.
Add the mussels and cover the pan.
Simmer until the shells open, 7 to 10 minutes.
Strain the broth.
