Ingredients

 
6 bacon slices
 
1 medium-sized onion, chopped fine
 
1/2 lb (250 g) fresh mushrooms, thinly sliced
 
1/4 tsp (1 mL) dried tarragon
 
Salt and pepper to taste
 
Toasted buttered bread

Directions

Place the bacon in an 8 x 8-inch (20 x 20 cm) microwave-safe dish.
Microwave at HIGH 4 to 5 minutes.
Remove bacon to paper towelling, let it cool, then crumble.
Add the chopped onion to 2 tablespoons (30 mL) of the bacon fat.
Discard the remaining fat.
Microwave at HIGH 4 to 5 minutes, stirring once.
When the onion is soft, add the sliced mushrooms, stir well.
Add the tarragon, stir again.
Microwave at HIGH 2 minutes.
Add the bacon, stir.
Microwave at MEDIUM-HIGH 1 minute.
Cut the toasted buttered bread in halves or quarters, top with the mushrooms and serve.
