Ingredients

 
8 small slices of stale bread,
 
3/4 lb. mushrooms,
 
About 3 oz. of butter,
 
1/2 glass of stock,
 
3 yolks of egg,
 
1 small lemon,
 
1 tablespoonful of flour.

Directions

Don't peel the mushrooms, remove only the earthy parts; wash them in vinegar and water; take off the stalks, and chop these in large pieces.
Put 2 oz.
of butter in a pan, and add the chopped-up mushroom stalks; fry gently, while stirring continually, for about 5 or 6 minutes.
Sprinkle with flour, let this brown, then add the stock.
Stir until smooth.
Slice the mushroom heads finely, and cook them on a moderate heat, in the sauce, for 20 minutes.
At the end of this time the sauce should be quite thick.
A few minutes before it is ready, grill your toast, butter it and arrange it on a hot plate.
Beat up the three egg yolks with lemon juice, and add to the mushroom sauce away from the heat.
Pour the mushrooms in their sauce over the buttered pieces of toast.
