Ingredients

 
6 ounces dried mushrooms
 
4 stalks scallions
 
1 piece ginger
 
1/2 teaspoon soy sauce
 
1/2 teaspoon salt
 
1 teaspoon sugar
 
1 teaspoon cornstarch
 
1 tablespoons oil
 
1 1/2 cups chicken broth
 
1/2 cup mushroom water
 
Thickening:
 
1 teaspoon cornstarch
 
2 tablespoons water
 
4 tablespoons oyster sauce
 
1/2 pound snow peas
 
2 tablespoons oil
 
1 teaspoon salt

Directions

Wash mushrooms and soak in a small bowl of boiling water for about 1/2 hour.
Remove from liquid and cut off stems; set the liquid aside.
Cut the scallions into 1 inch lengths and shred the ginger.
Mix together in a large bowl the soy sauce, salt, sugar, cornstarch and mushrooms.
Be sure that the mushrooms are well coated with the liquid mixture.
Heat pan with the oil and when it is very hot brown the mushrooms.
Add scallions and the ginger and saute together for 5 minutes.
Add the chicken broth and 1/2 cup mushroom water and simmer for 10 minutes.
Add the thickening and simmer for another 2 minutes and add oyster sauce.
Wash and stem the snow peas, leaving the pods intact.
Plunge them into a saucepan of boiling water for 60 seconds.
Drain well.
Heat pan with the oil and when it is very hot saute the snow peas with salt for 1 minute.
Remove from the heat and drain the peas well.
Place on a shallow platter and cover with the very hot mushroom mixture.
