Mushrooms Under Glass Recipe

 Medium mushrooms1 Pound
 Soft butter1⁄4 Cup (4 tbs)
 Lemon juice2 Teaspoon
 Chopped parsley1 Tablespoon
 Salt1⁄2 Teaspoon
 Paprika To Taste (Preferably Imported Rose Variety)
 Toast rounds4
 Cream1⁄2 Cup (8 tbs)
 Sherry2 Tablespoon


1. Preheat oven to moderate (375° F.).
2. Trim the stems from the mushrooms and reserve for another use.
3. Cream the butter and add the lemon juice, parsley, salt and paprika. Spread the toast with half the butter mixture and place in four individual bak-ing dishes. Spread the remaining butter on the mushroom caps and heap them on the toast. Pour the cream over the top.
4. Cover with glass domes and bake twenty-five minutes. Add more cream if the mushrooms become dry.
