Mushrooms in Oyster Sauce Recipe

This dish is one of my own concoctions. It is easy to prepare and can be served as an appetizer or as side dish. Butter, Chinese rice wine and oyster sauce makes this dish savory. The use of butter is not Chinese by nature but adds richness to the mushrooms.

Recipe Story

Usually children don't like mushrooms but my daughter has loved this dish even when she was very young. Maybe you can win over some kids, if you can get them to at least try it. While I didn't get this dish from any Chinese source the addition of oyster sauce and rice wine make it fall in the oriental category. The use of butter just seems to be a natural companion to the mushrooms.

Ingredients

 1 Lb. box of regular white mushrooms
 Butter6 Tablespoon
 Rice wine1 Tablespoon
 Oyster sauce2 Tablespoon

Directions

Clean the mushrooms with a brush of any dirt or deposits on them. Don't wash them. Slice them into 1/4" pieces stems and all. Heat the wok and melt the butter. When melted add the mushrooms and stir to coat all pieces with butter. When the pieces are coated add the Chinese rice wine and oyster sauce. Continue to stir, again coating all the pieces. Stir until the liquid of the mushrooms just barely begins to break out and appears in the bottom of the wok. Serve immediately. This can be served over rice as a side dish.
