Ingredients
1/2 lb. jumbo pasta shells
4 tbsp. olive oil
2 tbsp. crushed garlic
1 lb. chopped mushrooms (common or wild)
1/4 cup chopped scallions or green onions
1 cup Parmesan or Romano cheese (or combined)
1/2 cup marsala wine (sweet red wine)
1 tbsp. chopped shallots or green onions
1/2 cup heavy cream
1/3 cup soft butter
1/2 cup chopped tomatoes
1/4 cup green peas
1/4 cup sliced mushrooms(preferably wild)
Salt and pepper to taste
Directions
Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Heat oil in large skillet.
Add garlic and mushrooms and cook on a medium heat until soft.
Add scallions to above and cook for 2 minutes.
Add and puree mixture in food processor.
Fill shells and place in baking dish.
Meanwhile, prepare sauce.
Heat and cook on a medium heat for approx 2 minutes.
Add and cook for 2 more minutes.
Add to above until blended.
Add to above and pour over shells.
Cover and bake until hot, approx 30 minutes.
