Mushrooms Ala Grecque Recipe

Ingredients

 
1 lb. fresh mushrooms
 
1 tsp. grated lemon rind
 
3/4 cup olive oil
 
1 bay leaf
 
2 cloves garlic, crushed
 
3 Tbsp. lemon juice
 
1 tsp. salt
 
1/2 cup tarragon vinegar
 
1/8 tsp. white pepper
 
Parsley, chopped coarse

Directions

Wash mushrooms and trim stems.
Small mushrooms up to 1 inch can be left whole, larger ones should be halved or quartered.
Saute mushrooms in olive oil for about 1 minute.
Add rest of ingredients and boil 3 minutes.
Chill and serve.
Will keep in refrigerator for weeks.
Are best if made at least 24 hours before serving.
