Ingredients

 Mushrooms1 1/2 Pound
 Shallots1 , chopped
 Olive oil2 Tablespoon
 Unsalted butter2 Tablespoon
 Garlic- 1 small clove, crushed with little salt
 Salt1/2 Tablespoon
 Pepper1 To taste
 Tomato puree2
 Lemon juice1 Tablespoon, squeezed
 Parsley1/2 Cup (16 tbs), finely chopped
 Lettuce1

Directions

GETTING READY
1) Wipe the mushroom tops with a clean damp cloth and cut into quarters.
2) Arrange the lettuce on a serving plate.

MAKING
3) In a non stick pan heat oil and butter, add shallot sand sauté a bit, but do not brown.
4) Add crushed garlic and mushrooms. Cook for 5 minutes stirring often.
5) Add salt and pepper, and cook till mushroom are almost cooked and dry.
6) Mix in the tomato puree. Cook for few more minutes, stirring occasionally.

FINALIZING
7) Remove the mixture in a bowl check the seasoning. Let it cool.
8) Add lemon juice to taste and add parsley.

SERVING
9) Serve the mushrooms on the lettuce, at room temperature.
