Classic Mushroom Sauce Recipe
Personally, I think that this Mushroom Sauce recipe is the best in the world, that is why I am excited about sharing this with you. Just try it once, and you'll no doubt want to prepare this for your friends again.
Ingredients
1 tbsp. butter
1/2 cup finely chopped mushrooms
1 green onion, finely chopped
2 tbsp. dry white table wine
1 tbsp. buffer
1 tbsp. flour
1/4 tsp. salt
Dash of pepper
Tiny pinch tarragon
1/4 cup chicken stock
Directions
Heat 1 tbsp. butter in small saucepan.
Add mushrooms and onion and cook quickly, stirring constantly, 2 minutes (mixture will be thick and dry).
Add wine and cook again until nearly dry, stirring.
Add 1 tbsp. butter and stir until melted.
Sprinkle in flour, salt, pepper and tarragon and stir to blend.
Remove from heat.
Add chicken stock, all at once, and stir to blend.
Return to low heat and cook, stirring constantly, until thick.
Stir in drippings from filets mignons as directed in that recipe and serve over filets.
