Directions

Remove stems from mushrooms and chop them finely.
Heat the 6 tbsp. butter in skillet and cook the chopped mushroom stems gently 3 minutes.
Add them to ground meat along with 1 tsp. salt, 1/4 tsp. pepper and Worcestershire sauce.
Mix lightly with a fork.
Shape meat mixture into 4 large patties.
Put on rack in broiler pan.
Put high under hot broiler and broil until meat is cooked to your liking (5 minutes a side for pink inside).
Put on hot serving plates.
Heat 1/4 cup butter in skillet used earlier while meat is cooking.
Slice mushroom caps, add to hot butter and cook gently, stirring, 3 minutes.
Sprinkle with salt and pepper and stir in lemon juice and tarragon.
Spoon over hot meat patties and serve immediately.
