MUSHROOM CURRY Recipe

Ingredients
1 lb. fresh mushrooms
2 medium sized onions
3 medium sized tomatoes
6 small potatoes
1 tblspn, cooking fat
1 tblspn, lemon juice
1 dssrtspn. Curry powder
salt to taste
small piece of ginger
1 small chilli (pounded)
Directions
Soak the mushrooms in cold water for 15 minutes, scrape them lightly and if too big, cut into halves and quarters.
Wash under running water and drain.
Scrape the potatoes, keeping them whole.
Heat the cooking fat in a saucepan, add the thinly sliced onions, ginger and chilli.
Allow to sizzle for a minute or two, then add mushrooms, potatoes and sliced tomatoes.
Mix well and if the juice is not required let the mushrooms cook uncovered on medium heat for 30 minutes.
Add curry powder and lemon juice, simmer for another 10 minutes and then serve piping hot.
