1 pound mushrooms
5 cans (10 1/2 oz. each) beef bouillon
3 soup cans water
2 teaspoons dried tarragon
Salt and pepper
1/4 cup sherry (optional)
Directions
Finely mince mushrooms or put through food chopper with medium blade.
Combine mushrooms with bouillon and water; simmer for 30 minutes, adding the tarragon the last 10 minutes.
Pour through a moistened muslin cloth.
Discard mushrooms.
Correct seasoning and add the sherry, if desired.
Reheat and serve from a tureen; keep warm on an electric warming tray or over a candle.
