Mushroom Stuffed Mushrooms Recipe
Whether or not you like mushrooms you will like this Mushroom Stuffed Mushrooms.Made this Mushroom Stuffed Mushrooms for our Friday night get together with neighbours and I still receive rave reviews. A delicious keeper!
Ingredients
22-24 whole regular mushrooms, about 1-1 1/2 inches wide, cleaned and stems removed
2 tbs (30 ml) butter
1 clove garlic, minced
4 oz (120 g) Fresh or Dried Mushrooms, such as fresh Japanese Honey Mushrooms, Oyster, Pom Pom, Shiitake or Wood Ear, or reconstituted dried Cepes, Morels, Shiitake, Wood Ear, Oyster or Porcini, finely chopped
2 tbs (30 ml) chopped green onion
1 tbs (15 ml) flour
1/4 cup (60 ml) light cream
1 tbs (15 ml) Fresh Basil, chopped or 1 tsp (5 ml) crushed dried basil
1 tbs (15 ml) chopped parsley
1/4 tsp (1 ml) pepper slivered almonds or pine nuts for garnish
Directions
Set aside whole regular mushrooms; chop stems and reserve.
In skillet, melt butter.
Saute reserved stems with garlic, chopped mushrooms and onion about 3 minutes, or until tender.
Saute 3-5 minutes more over low heat, or until nearly all liquid is absorbed.
Sprinkle mixture with flour; add cream.
Cook and stir 1 minute more.
Add basil, parsley and pepper; stir to blend well.
Remove from heat.
Place whole mushroom caps stem side up on a lightly greased baking sheet.
Spoon mushroom mixture into caps, mounding slightly.
Sprinkle a few almonds or pine nuts over each mushroom.
Bake in a 375°F (190°C) oven for 10 minutes.
Run under broiler 2 minutes just to brown.
