Mushroom Stuffed Lamb Rolls Recipe

Ingredients
1 tbsp (15 ml) prepared mustard
8 slices roast of lamb, cooked
3 tbsp (45 ml) butter
1 small onion, sliced
1 Cup (250 ml) canned mushrooms
1 Cup (250 ml) canned tomato soup
Salt and pepper
4 tsp (20 ml) chopped parsley
1/2 tsp (2 ml) fines herbes
Directions
– Coat each roasted lamb slice with prepared mustard.
– In a skillet, melt butter, saute onions and mushrooms and season with salt and pepper. Divide mixture evenly onto each lamb slice.
– Roll each slice and secure with toothpicks.
– Pour tomato soup into a stove-top casserole. Add the meat, sprinkle with parsley and fines herbes, then let mixture simmer over medium heat 5 to 10 minutes.
