Mushroom Sauce Recipe
Ingredients
2 tablespoons olive oil
1/3 cup minced shallots
1 large clove garlic, minced
1 pound sliced mushrooms (shiitake, cremini, oyster, or any combination)
1 teaspoon minced fresh thyme
Salt and pepper
2 tablespoons minced fresh parsley, for garnish
Directions
1. Heat the olive oil in a large skillet over moderately high heat.
2. Add the shallots and cook, stirring, for 2 minutes, or until softened. Add the garlic and cook, stirring, 1 minute.
3. Add the mushrooms, thyme, and salt and pepper to taste, and cook the mixture over moderate heat, stirring occasionally, for 5-7 minutes, or until the mushrooms are firm and the liquid has evaporated.
3. Spoon the mushroom mixture over the polenta and garnish with parsley.
