Mushroom Pie Recipe
Ingredients
1 lb. mushrooms, sliced
1 cup sprouted lentils, steamed
2 shallots, chopped
6 tbsp. butter or margarine
2 tbsp. flour
1/2 cups heavy cream
2 egg yolks
1 tsp. ground nutmeg
Salt to taste
Freshly-ground pepper
1/4 cup grated Swiss cheese
1 9-inch pie shell, pre-baked 10 minutes
Directions
Preheat oven to 375°.
Heat butter in large skillet.
Saute shallots for 2 minutes over medium heat.
Add mushrooms and saute, stirring, for 10 minutes, until cooked but not soft.
Sprinkle flour over mushrooms.
Cook for 2 minutes.
Beat egg yolks with cream and seasonings.
Add to mushrooms and blend in, stirring until thickened over low heat.
Pour mixture into pie shell.
Sprinkle with cheese.
Bake for 15-20 minutes.
