Mushroom Italian Recipe

Baby mushrooms, stir fried with aromatic fresh herbs used predominantly in Italian cuisine. If you dont have fresh herbs at your disposal, use dried herbs instead.

Recipe Story

Mushrooms are my ultimate favourite...there are so many ways one can use this versatile ingredient. But i prefer it best when stir fried with fresh herbs and served piping hot. I usually use fresh herbs in my cooking..but there are times when even I have to given in to dried herbs..at such times..i sue the thumb rule 3:1 for fresh: dried herbs..Use this as a guideline when you face a similar situation.

Ingredients

 Small fresh mushrooms- 1 pound, cleaned
 Vegetable cooking spray- as required
 Olive oil1 Teaspoon
 Basil2 Teaspoon, finely chopped
 Oregano2 Teaspoon, finely chopped
 Lemon juice1 Teaspoon
 Garlic salt1/4 Teaspoon
 Red pepper powder- a pinch
 Pimiento1 Tablespoon, finely chopped

Directions

MAKING
1. In a medium sauce pan, coat with vegetable spray and add olive oil.
2. Once hot, add garlic and sauté on a medium flame for few seconds.
3. Add rest of the ingredients gradually (apart from mushrooms and pimiento) and mix well. Sauté for 1 more minute.
4. Add mushrooms, mix well and sauté on a medium flame for 3 to 5 more minutes.
5. Add pimiento and mix well.

SERVING
6. Transfer on to a bowl and serve immediately.

TIPS
You can use quartered medium sized mushrooms, if baby mushrooms are not available.
