Mushroom Cream Chicken Breasts Recipe

Ingredients
2 whole chicken breasts (about 2 pounds), split lengthwise, rinsed and patted dry
1 pound fresh mushrooms, cleaned and sliced lengthwise
3 tablespoons butter or margarine
2 tablespoons all-purpose flour
1 teaspoon salt
1 cup half-and-half or cream
1 tablespoon dry sherry
Directions
1. Place chicken skin-side-down in an 8-inch square glass baking dish. Cover with waxed paper. Cook in microwave oven 8 minutes at High.
2. Turn chicken over; cook covered in microwave oven 4 minutes at High. Turn chicken right-side-up. Set aside covered.
3. Put mushrooms and butter into a l 1/2-quart glass casserole. Cook uncovered in microwave oven 4 minutes at High; stir after 2 minutes.
4. Add flour and salt to mushrooms; mix well. Add half-and-half and sherry; stir. Cook uncovered in microwave oven 6 to 8 minutes at High, or until sauce comes to boiling and is thickened; stir after 2 minutes, then stir every 30 seconds.
5. Pour off cooking liquid from chicken. Pour sauce over chicken. Cover with plastic wrap. Heat in microwave oven to serving temperature (about 2 minutes at High).
