Mushroom Consomme Recipe
Ingredients
| Butter/Margarine | 1/2 Ounce | |
| Onion | 1/2 Small, finely chopped | |
| Mushrooms | 4 Ounce, trimmed | |
| 1 pint stock OR water plus chicken stock cube | ||
| Squeeze of lemon juice | ||
| Sherry | 1 Tablespoon | |
Directions
MAKING
1) In a saucepan melt butter.
2) Gently fry onion till tender.
3) Add mushrooms and fry for 5 minutes.
4) Stir in stock and lemon juice and boil.
5) Take off from heat, adjust seasoning and mix sherry.
SERVING
6) Serve with cheese straws.
