Mushroom And Watercress Salad Recipe
Ingredients
3 cup snow-white mushrooms, medium size
2 tsp fresh lemon juice
2 tsp white wine vinegar
2 tsp olive oil
1/4 cup water
1/2 tsp salt
1/4 tsp dried tarragon, crushed
1/4 tsp ground basil
1 cup fresh watercress, chopped
Directions
Clean and slice mushrooms, place in a medium bowl.
Mix together the lemon juice, vinegar, oil, water, salt, tarragon and basil.
Pour dressing over mushrooms, mixing carefully to completely coat the mushrooms.
Marinate overnight in the refrigerator.
Just before serving, drain extra dressing from mushrooms, add watercress and toss to completely mix.
Divide among 8 chilled salad plates.
