Ingredients

 
1 package (10 oz.) frozen green lima beans
 
8 sliced fresh mushrooms or 1 can (4 oz.) sliced mushrooms, drained
 
1 large onion, chopped
 
1 tablespoon chopped fresh parsley or 1 teaspoon dry parsley flakes
 
1/2 teaspoon oregano
 
1/3 cup wine vinegar
 
3 tablespoons olive oil
 
1 clove garlic, minced or mashed
 
1/2 teaspoon salt
 
1/4 teaspoon celery salt
 
1/4 teaspoon pepper
 
Onion rings

Directions

Cook lima beans according to package directions until tender.
Drain, rinse under cold running water, and drain thoroughly again.
Toss together with mushrooms, onion, parsley, and oregano.
In a covered jar or container, shake together vinegar, olive oil, garlic, salt, celery salt, and pepper.
Pour over bean mixture and toss thoroughly.
Chill in refrigerator 1 to 2 hours.
