Mushroom And Chicken Risotto Recipe

Ingredients

 
2 tbsp. olive oil
 
1 tbsp. finely chopped Shallots or onions
 
1/2 cup sliced mushrooms
 
8 oz. rice, (preferably Italian risotto)
 
1/2 cup white wine
 
Approx. 2 1/2 cups chicken broth
 
4 tbsp. butter
 
1 tbsp. Parmesan cheese
 
3 oz. diced cooked chicken

Directions

In medium skillet, saute for 2-4 minutes.
Add and cook for another 3 minutes.
Do not let rice brown.
Add slowly to rice and cook on a medium heat for approx 15-20 minutes, until liquid is absorbed and rice is tender.
Add to rice, stir, and serve.
