stay dry after they have cooked. Put the mushrooms on a griddle, or if you don't have a griddle use a
large frying pan. Set the temperature to medium high. Cut the mushrooms up into bite size pieces and
let them cook for a few minutes. Then place your tortillas on the griddle to brown, you can go ahead
and grate the cheese while the tortillas are cooking.
At this point (five to ten minutes from starting) you are ready to assemble the quesadillas. With the
tortillas still on the griddle lay out the grated cheese and place the mushrooms on top. Then fold the
tortilla in half and let sit for another 30 seconds.
The quesadillas are ready now, remove from the griddle and served with sour cream and salsa.
