Mushroom And Bacon Salad! I can live on this salad alone. You would agree with me if you would try this yummy salad just once. Trust me, you will never get over the flavor and texture of this delicious Mushroom And Bacon Salad!
Ingredients
| 8 oz. button mushrooms, wiped clean and thinly sliced | ||
| Rinds | 4 | |
| 1 celery stalk, trimmed and finely chopped | ||
| Parsley | 1 Tablespoon, chopped | |
| Chives | 1 Tablespoon, chopped | |
| Olive oil | 6 Tablespoon (DRESSING) | |
| White wine vinegar | 2 Tablespoon (DRESSING) | |
| Salt | 1/2 Teaspoon (DRESSING) | |
| Ground black pepper | 1/4 Teaspoon (DRESSING) | |
Directions
First make the dressing.
In a medium sized mixing bowl, combine all the dressing ingredients, beating with a fork until they are well blended.
Add the sliced mushrooms and set aside to marinate for 30 minutes.
Meanwhile, preheat the grill [broiler] to high.
Place the bacon slices on a rack in the grill [broiler] pan and grill [broil] the bacon, turning once, for 5 minutes, or until it is crisp.
Remove the bacon from the grill [broiler] and set aside to drain and cool on kitchen paper towels.
Crumble the bacon into the mushroom mixture and add the celery, parsley and chives.
Mix well.
Transfer to a serving dish and serve immediately.
