Muse Cake Recipe

Ingredients
1 med orange with rind
1/2 cup raisins
2 cup flour
1/4 cup granulated fructose
3 tsp granulated sugar
1 oz. baking chocolate, melted
3/4 cup buttermilk
2 eggs
2 tsp butter, softened
1 tsp baking soda
1/4 tsp salt
Directions
Squeeze juice from orange and set aside.
Chop orange rind into small pieces.
Combine chopped rind, raisins and 2 T. (30 mL) of the flour in blender.
Blend until finely chopped.
Transfer to large mixing bowl.
Add remaining flour, fructose, sugar replacement, melted chocolate, buttermilk, eggs, butter, baking soda and salt.
Stir to completely blend.
Pour batter into well greased 9 x 13 in. (23 x 33 cm) baking pan.
Bake at 350°F (175°C) for 40 to 50 minutes or until cake tests done.
Remove from oven; immediately pour reserved orange juice over entire surface.
