Muscadet Wine Sherbet Recipe

Ingredients
Juice of 6 oranges
Juice of 4 lemons
1 1/2 cups sugar
2/3 cup Muscadet wine
1 egg white
1/4 tsp cinnamon
1 cup fresh grapes
Directions
In a saucepan, mix half the fruit juices with sugar.
Bring to a boil.
Over moderate heat, simmer 5 minutes.
Let stand to cool slightly.
Fold in remaining juices and wine.
Pour into an airtight container.
Freeze until mixture is almost solid.
In a mixer bowl, combine egg white and cinnamon.
Beat until stiff peaks form.
Set aside.
Remove mixture from freezer.
In a food processor, beat until smooth.
Gently fold in egg white.
Freeze 3 hours.
Remove from freezer 15 minutes before serving.
If sherbet is too hard, beat a second time in food processor for a creamier texture.
