Recipe Story

It was a cold sunday morning when some of us friends were visiting Chef Vikas at his restaurant (tandoor palace) on Fulton Street and Broadway. We were discussing ideas for a series recipe videos that Vikas could to for ifood.tv. After a long brainstorming session, the master chef, seeing us feeling a little cold and hungry decided to treat us to some nourishing and heart warming soup! But what did he know that as he walked into his restaurants kitchen (which was closed given it was a sunday), we would setup ourselves to shoot him cook impromptu and in the daily setting of his restuarant. Ok, i know there are a lof of videos of folks making food in "decked up" kitchens, but for a change it would be fun to capture a master chef do his job in his natural and at times "messy" setting. So the result is this great recipe video of Mulligatwany soup. Enjoy! We certainly had a warm sunday after drinking this classic indian soup.

Ingredients

 
Carrot – 1
 
Olive oil – 2 tablespoons
 
Ginger – 2 teaspoons, finely chopped
 
Garlic - 2 teaspoons, finely chopped
 
Water – 4 cups
 
White lentils – 1 cup
 
Onion – 1, finely chopped
 
Curry powder – 1 tablespoon
 
Basmati Rice – 2 tablespoons
 
Coconut cream or heavy cream or yoghurt – ¼ cup
 
Pepper – as per taste

Directions

GETTING READY
1. Peel the carrots.
2. Cut the zucchini and broccoli.
3. Cook white lentils in boiling water.

MAKING
4. In a pan, heat olive oil.
5. Add finely chopped ginger and garlic, onions. Stir and cook till onions get translucent.
6. Add curry powder.
7. Add basmati rice and coconut cream.
8. Puree cooked white lentils to a fine blend. Add this lentil broth to the vegetables.
9. Add freshly ground pepper.
10. Add chopped cilantro or parsley and remove from flame in a minute or two.

SERVING
11. Serve Hearty Mulligatawny Soup by squeezing juice of half a lemon or yoghurt as a garnish.
