Mulligatawny Recipe
Mulligatawny is a special north indian soup made with vegetables and a meat of choice. This mulligatawny recipe is prepared with vegetables and pieces of tart apples. Spiced and herbed with parsley, the mulligatawny soup can be served over rice.
Ingredients
1/4 cup onion, chopped
1/4 cup celery, chopped
1/4 cup carrot, diced
2 tart apples, sliced
1/4 cup chicken stock
1/4 cup whole wheat flour
1 tsp. curry powder
6 cup chicken stock
1 cup tomatoes stewed
1/2 green pepper, minced
1 tsp. parsley, minced
1/8 tsp. black pepper
1/8 tsp. mace
2 cloves
1 cup chicken, cooked and diced
1 cup brown rice cooked
Directions
1. Sautg onion, celery, carrots, and apple slices in chicken stock.
2. Stir in flour and curry powder.
3. Gradually add chicken stock, stirring constantly.
4. Stir in tomatoes, green pepper, parsley, black pepper, and mace. Cook until vegetables are tender.
5. Strain soup. Puree vegetables in blender and return to soup pot.
6. Add cloves and chicken. Heat.
7. Add hot cooked rice.
