My longing for muffins strengthened during high school days. This muffins as a breakfast is a winner! Once tasted, I am sure you would love to prepare this muffins recipe for your dear ones!

Ingredients

1 cup sifted all-purpose flour

1/8 teaspoon salt

1 1/2 teaspoons baking powder

2 tablespoons sugar

1 large egg

2 tablespoons butter, melted

1/2 cup milk

Directions

Grease and line 9 muffin tins.
Sift the flour, salt and baking powder together into a bowl, and add the sugar.
In another bowl, beat the egg with the melted butter and the milk then add to the dry ingredients and mix together quickly.
Do not try to blend the ingredients smoothly together; the mixture should still be slightly lumpy.
Spoon the mixture into the prepared tins filling them two-thirds full.
Any empty tins should have a little water put in them.
Bake toward the top of a moderately hot oven (400°F) for about 20-25 minutes.
Leave the muffins in the tins for a few moments before removing them.
Eat as soon as they are taken from the tins.
