Simple Muffins Recipe

Ingredients
1/2 oz. fresh (compressed) yeast
4 tablespoons warm water
1/2 pint warm milk
1 egg, beaten
1 oz. (21) butter, melted
1 lb. strong plain (all-purpose) flour
1/2 teaspoon salt
Directions
Cream the yeast with the water.
Combine the milk, egg and butter.
Sift flour and salt into a warmed bowl and make a well in the centre.
Pour in the yeast liquid and milk mixture.
Beat until smooth.
Turn onto a floured surface and knead for 8 minutes to give a soft, elastic dough.
Put into a clean bowl, cover with a damp cloth and leave in a warm place for 1 1/2 hours or until doubled in size.
On a floured surface, roll the dough to 1/2 inch thickness.
Cut out rounds, using a 2 1/2 inch plain pastry cutter.
Grease a griddle or heavy frying pan (skillet) and place over a low heat.
Cook the muffins on both sides until lightly browned.
