Muffin Mix Griddle Cakes Recipe
Ingredients
| 1 13 1/2-ounce package blueberry muffin mix | ||
| Eggs | 2 , beaten | |
| Cooking oil | 2 Tablespoon | |
| Honey | 2/3 Cup (16 tbs) | |
| 1/3 cup maple-flavored syrup | ||
| Butter or margarine | ||
Directions
Combine muffin mix, beaten eggs, and 1/3 to 2/3 cup water (use 2/3 cup water for thick pancakes, 2/3 cup for thin).
Beat till smooth; stir in oil.
Fold in blueberries.
Preheat lightly greased heavy skillet or griddle over hot coals for 2 to 3 minutes.
For each cake, spread 1 tablespoon batter on prepared skillet or griddle.
Cook over hot coals till browned, about 1 1/2 minutes per side.
