Muesli With Wheat Berries Recipe
Ingredients
| Wheat berries | 1 Cup (16 tbs) | |
| Cold water | 3 1/2 Cup (16 tbs) | |
| Raisins | 1/3 Cup (16 tbs) | |
| Dried apricots | 1/4 Cup (16 tbs), chopped | |
| 1/4 cup blanched or unblanched almonds, coarsely chopped | ||
| Shredded coconut | 3 Tablespoon | |
| Sesame seeds | 2 Tablespoon | |
| Light brown sugar | 1 1/2 Tablespoon | |
| Skim milk | 2 Cup (16 tbs) | |
Directions
1 The night before, rinse the wheat berries and place them in a large bowl with the water. Soak for 12 hours, preferably in the refrigerator.
2 Transferthe wheat berries and water to a large saucepan and bring to a boil over moderate heat. Lower the heat and simmer, covered, for 30 to 35 minutes or until the wheat berries are tender but somewhat crunchy.
3 Remove from the heat and stir in the raisins, apricots, almonds, coconut, sesame seeds, and sugar. Spoon into bowls and top with the milk.
