Mrs. Van's Dutch Apple Cake Recipe
Ingredients
| All purpose flour | 1 1/4 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Sugar | 1 Teaspoon | |
| Baking powder | 1 Teaspoon | |
| Butter/Margarine | 1/2 Cup (16 tbs) | |
| Egg yolk | 1 | |
| 2 tablespoons brandy or milk | ||
| Apples and dried currants | ||
| Cinnamon Topping | ||
Directions
Sift together dry ingredients; blend in butter.
Add egg yolk and brandy.
Press dough with the fingers into a 9-inch layer-cake pan.
Cover with apples that have been peeled, cored, and cut into eighths.
Sprinkle with a few currants.
Cover with Cinnamon Topping.
Bake in preheated moderate oven (350°F.) for 45 minutes.
