Mozzarella Mushrooms Recipe
Ingredients
| Mushrooms | 24 Large | |
| Bacon Slices | 2 , chopped | |
| Green onions | 2 , chopped | |
| Seasoned bread crumbs | 1/2 Cup (16 tbs) | |
| Parsley | 1 Tablespoon, chopped | |
| 6 ounces mozzarella cheese, cut into 24 cubes | ||
Directions
Wipe mushrooms with a damp towel.
Remove caps and set aside.
Finely chop stems.
In a 4-cup glass measure, combine mushroom stems, bacon, and green onions.
Cover with plastic wrap and cook on HI, 1 - 1 1/2 minutes.
Pour off fat.
Stir in bread crumbs and parsley.
Mound bread crumb mixture in mushroom caps.
Push cheese cube into center of each mushroom.
Arrange half the mushrooms in a ring on paper towel-lined plate.
Cook on HI, 3 to 3 1/2 minutes.
Repeat with remaining mushrooms.
