Mozzarella Salad With Roasted Beets, Strawberries And Figs Recipe Video
Ingredients
Small beets, red or golden, roasted “naked” and sliced
Mozzarella, Ovaline (“Egg-size”) and sliced
Strawberries, sliced
Figs, sliced
Balsamic vinegar, preferably aged 10 years or more
Extra virgin olive oil
Directions
GETTING READY
1. Preheat oven to 400 degrees.
MAKING
2. Rinse beets and then place them in a baking dish and roast them for about 45 – 55 minutes, depending on how soft you like them.
3.When the beets are done allow them to cool. Remove skin with a peeler and slice them along with the strawberries and figs.
4. Slice the mozzarella and arrange the salad however you like.
5. Drizzle about 1-2 tablespoons of balsamic vinegar on top followed by 1-2 tablespoons of olive oil.

6. Serve and enjoy!
