Ingredients
6 ounces dark sweet chocolate, cut into pieces
1/2 cup plus 1 teaspoon sugar
1/3 cup milk
4 egg yolks
6 egg whites
1/4 cup sugar
Powdered sugar (garnish)
Directions
Preheat oven to 350°F.
Butter six 1/2-cup souffle dishes and sprinkle with sugar, shaking out excess.
Combine chocolate, 1/2 cup plus 1 teaspoon sugar and milk in medium saucepan.
Set over low heat and cook, stirring frequently, until chocolate is melted.
Transfer to mixing bowl and let cool slightly.
Beat in egg yolks.
Beat egg whites in medium bowl until firm.
Add remaining sugar and continue beating until whites are stiff and glossy.
Stir half of whites into chocolate mixture, then carefully fold in remaining whites, blending thoroughly.
Gently spoon into prepared dishes.
Bake 20 minutes.
