Mousse De Kiwi Le Napoleon Recipe
Ingredients
3 eggs
1/2 cup sugar
6 tablespoons Cointreau or Curacao or Grand Marnier
2 cups whipping cream
1/4 cup sugar
3 drops vanilla
3 kiwi fruit, peeled and finely chopped or grated
1 kiwi fruit, peeled and sliced (garnish)
Directions
Break eggs into medium bowl.
Add 1/2 cup sugar and 4 tablespoons liqueur.
Set bowl into larger bowl filled with hot water.
Whisk mixture until thick.
Remove from water and continue whisking until cooled, 3 to 5 minutes.
Cool completely in refrigerator.
Whip cream in medium bowl until thickened.
Add 1 1/2 cup sugar with vanilla and continue beating until stiff.
Gently fold in chopped kiwi and remaining liqueur.
Swirl egg mixture carefully into cream.
Spoon mousse into large cocktail glasses or tall parfait glasses.
Top with sliced kiwi.
