Ingredients

 2 cup left-over khichree or brown rice
 1/2 cup shelled and boiled green, peas
 1 cup hopped spring onion
 1 tsp hinly sliced capsicum
 Cashewnuts1/4 Cup (16 tbs), mixed (FOR THE SALAD :)
 1/4 cup seedless raisins or sultanas
 Oil2 Teaspoon (FOR THE DRESSING:)
 Vinegar1 Teaspoon (FOR THE DRESSING:)
 Sugar1 Teaspoon (FOR THE DRESSING:)
 A dash of any hot sauce
 2 tsp chopped sweet mango pickle
 250 gms shelled and boiled green peas
 Salt To Taste
 Pepper To Taste

Directions

Mix all the above salad ingredients together.
Blend the dressing together thoroughly and toss the salad ingredients in it.
Mould the salad in a ring mould, pressing the rice down firmly.
Refrigerate.
When ready to serve, unmould carefully on a salad platter and spoon green peas in the centre and around the mould.
