Ingredients

 
1 onion, chopped
 
1 carrot, peeled and grated
 
1 stalk celery, chopped
 
1 teaspoon oil
 
1 1/2 quarts rich homemade beef stock or 1 1/2 quarts water and 8 bouillon cubes
 
1 teaspoon grated fresh ginger root
 
1/2 teaspoon each cumin and seasoned pepper
 
salt to taste
 
3 tablespoons tomato paste meatballs
 
2 tomatoes, peeled and chopped
 
1/4 cup chopped cilantro

Directions

Using a large soup kettle, saute onion, carrot, and celery in oil until glazed.
Add stock, ginger, cumin, pepper, salt, and tomato paste.
Cover and simmer 25 minutes.
Drop in meatballs and cook 15 minutes longer.
If possible, cool and chill, then skim off any extra fat.
Reheat and add chopped tomatoes and cilantro just before serving.
