1 pound carrots, peeled and coarsely shredded
2 tablespoons extra virgin olive oil
2 teaspoons fresh lemon juice
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons chopped fresh cilantro leaves
Lemon slice for garnish
Directions
In medium bowl, stir carrots, olive oil, lemon juice, coriander, cumin, salt, and pepper.
