1 tsp each of baking powder & baking soda
 
1/2 tsp each of salt and cinnamon
 
1/4 tsp nutmeg
 
generous pinches of ginger and allspice
 
3/4 cup brown sugar
 
1 egg
 
1/2 cup buttermilk or plain yogurt
 
1/4 cup vegetable oil
 
1/2 tsp vanilla
 
3/4 cup drained crushed pineapple
 
3/4 cup finely grated carrots
 
1/2 cup raisins
 
1/2 cup chopped nuts, such as walnuts or pecans
 
400 degrees F, 20-25 minutes, yield 12 muffins
