Mornay Sauce Recipe

Ingredients
1 tablespoon butter
1 tablespoon flour
1 cup milk
3 tablespoons grated Swiss or Gruyere cheese
1 tablespoon grated Parmesan cheese
1/2 teaspoon mild prepared mustard, preferably of the Dijon type
Directions
Melt the butter in a small saucepan.
Remove from the heat and add the flour, stirring with a wire whisk.
Return toa moderate heat.
Add the milk gradually, stirring the mixture constantly until the sauce is thick ened.
Add the remaining ingredients, and salt and pepper to taste.
