More Blueberry Muffins Recipe
Bluberry muffins are a must to bake when the lovely berries flood the market. Deliciously light and flavorul, there is no way this muffin recipe can go wrong.
Ingredients
2 cups all-purpose flour 500 mL
2 tsp baking powder 10 mL
1/4 tsp salt lmL
1/2 cup softened butter 125 mL
1 cup granulated sugar 250 mL
2 eggs
3/4 cup milk 175 mL
11/2 cups blueberries 375 mL
Directions
In a large bowl, mix together flour, baking powder and salt.
Make a well in the center.
In another bowl, cream together butter and sugar, then beat in eggs one at a time.
Gradually stir in milk.
The mixture may look curdled.
Pour into the flour mixture and stir just until moistened.
Gently fold in blueberries.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for 25 to 30 minutes or until toothpick inserted in center of a muffin comes out clean and dry.
