Ingredients

 
2 cups whole wheat flour
 
¾ cup white radish (mooli), grated
 
¼ cup radish (mooli) leaves, finely chopped (optional)
 
¾ cup fresh low fat curds (yoghurt)
 
½ teaspoon turmeric powder (haldi)
 
1½ teaspoons chilli powder
 
1 teaspoon oil
 
salt to taste

Directions

Mix all the ingredients and knead into a soft dough, adding a little water if required.
Divide the dough into 15 equal portions.
Roll out each portion thinly into a 125 mm. (5") diameter circle.
Cook each paratha on both sides on a non-stick pan, smearing a little oil on each side, until brown spots appear on the surface.
Serve hot.

i just love these paratta varieties - however radish is not my pick, wondering whether I can substitute boiled-n-mashed potatoes and try this paratta.. will come out well rite?

I never tried making aloo paratha this way. I don't think it will come out nicely as the mashed potatoes tend to be sticky. The other variations to the mooli paratha are fenugreek leaves/methi paratha, spinach/palak paratha, paneer paratha or grated cauliflower or cabbage/ gobi paratha. You may add some finely chopped onions and chopped cilantro also.

Hi Sarita, I tried making this, but the parathas tend to stiffen or harden after making. Do i need to add some softening agents in the dough mix before preparing the paratha and leave it for sometime to set? I though I would try adding some yogurt, will that help?Please let me know

Hi Prezi, First of all try to make the dough soft. Keep the dough covered with wet kitchen towel, so that it doesn't dry out. If you want, you can rest the dough for 15 minutes. As soon as each paratha is done, keep it covered with a clean kitchen towel so that they remain soft. If you keep the parathas out, it tends to stiffen or harden.

Yes Sarita. I have heard and read it somewhere that you need to cover the prepared parathas in a cloth so that they remain moist! Would that help in any way? Also, another things I wanted to ask you about Mooli - when raw raddish tends to leave a sort of burning sensation in your tongue. So when made into paratha I think mooli probably wouldn't have that taste right?

I have tried this mooli paratha at one of my friends and it tasted so good. I liked the way mooli is grated in to fine bitable pieces, the feeling was simply great! Mooli when eaten raw leaves some sort of burning sensation, but when made into paratha is just awesome! Well, the one I tasted was a lil more on the spicier side; my friend had powdered Kashmiri chilies too added - And I love spicy stuff! Well what can I best serve this dish with - dahi alone or may be some pickle rite?

mooli paratha is a very common breakfast in north indian houses. its not only simple, but tastes great as well. though, i never tried it with curd as a mixing ingredient. will surely give a try n let you know....
