I learned this when I was in Dublin. The secret to a great Irish Coffee is whipping your own cream just right!
First, fill a glass coffee mug with hot water. Let it sit.
Pour heavy whipping cream into a cold bowl and beat with beaters that are also cold. I put mine in the freezer for a few minutes. Whip the cream on medium speed until very loose peaks appear. It appears to bubble a little bit. It should be wet but firm. Resist the urge to over beat!!
Empty the warm water from the glasses and add a shot of the whiskey and one tsp. of raw sugar. White sugar changes the taste. Combine.
Add the coffee of your choice. Many of the places I visited in Ireland used Nescafe Instant. Leave at least an inch at the top.
Spoon the cream gently on top of the coffee. Don't pour. The cream should make a definite line at the top of the coffee. It you over beat it, it will combine sooner.
